14.5 oz pkg, soft gingerbread cookie mix
reduced-fat cream cheese, softened
How To Make citrusy, cream-filled gingerbread cookie sandwiche
Heat oven as directed on cookie pkg. Line a lg baking sheet or 2 w/ parchment paper. Make cookie dough as directed on pkg. Divide dough into 24 cookies, bake as directed and cool.
In bowl, blend together lemon zest, lemon juice, cream cheese and splenda until smooth.
Place 2 tsp of cream cheese mix onto the bottom side of 1 cookie, top w/ another cookie to make a sandwich. Repeat w/ cream cheese mix and remaining cookies.
