These are so yummy! A nice tang of citrus goes nicely w/ the flavor of gingerbread.

Ingredients

  • 1 - 14.5 oz pkg, soft gingerbread cookie mix
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 4 ounces reduced-fat cream cheese, softened
  • 1/4 cup granulated splenda

How To Make citrusy, cream-filled gingerbread cookie sandwiche

  • Step 1
    Heat oven as directed on cookie pkg. Line a lg baking sheet or 2 w/ parchment paper. Make cookie dough as directed on pkg. Divide dough into 24 cookies, bake as directed and cool.
  • Step 2
    In bowl, blend together lemon zest, lemon juice, cream cheese and splenda until smooth.
  • Step 3
    Place 2 tsp of cream cheese mix onto the bottom side of 1 cookie, top w/ another cookie to make a sandwich. Repeat w/ cream cheese mix and remaining cookies.
