How to Make Citrusy, cream-filled gingerbread cookie sandwiche
- Heat oven as directed on cookie pkg. Line a lg baking sheet or 2 w/ parchment paper. Make cookie dough as directed on pkg. Divide dough into 24 cookies, bake as directed and cool.
- In bowl, blend together lemon zest, lemon juice, cream cheese and splenda until smooth.
- Place 2 tsp of cream cheese mix onto the bottom side of 1 cookie, top w/ another cookie to make a sandwich. Repeat w/ cream cheese mix and remaining cookies.
