- 1 - 14.5 oz pkg, soft gingerbread cookie mix
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 4 ounces reduced-fat cream cheese, softened
- 1/4 cup granulated splenda
How To Make citrusy, cream-filled gingerbread cookie sandwiche

Step 1Heat oven as directed on cookie pkg. Line a lg baking sheet or 2 w/ parchment paper. Make cookie dough as directed on pkg. Divide dough into 24 cookies, bake as directed and cool.

Step 2In bowl, blend together lemon zest, lemon juice, cream cheese and splenda until smooth.

Step 3Place 2 tsp of cream cheese mix onto the bottom side of 1 cookie, top w/ another cookie to make a sandwich. Repeat w/ cream cheese mix and remaining cookies.
