Ingredients
- 1 box (18 1/2 oz) devil's food cake mix
- 1/4 cup extra virgin olive oil
- 1/4 cup applesauce
- 2 large eggs
- 1 tablespoon pure white vanilla
- 3/4 cup simi sweet chocolate-premier white chocolate swirl chips
- 3/4 cup crème de menthe chocolate chunks
- 3/4 cup premier white-chocolate chips
- 1/4 cup flaked coconut
- 1/3 cup chopped pecans

Step 1Preheat oven 350°F Combine cake mix, oil, applesauce, eggs & vanilla in a large bowl. Mix well. Stir in chips, coconut and pecans. Spoon onto ungreased cookie sheet(s) and bake for 10 to 12 minutes depending on how big you make them.

Step 2Cool on rack for 2 to 3 minutes before removing from cookie sheet, then finish cooling on wire cooling racks. Made 36 good-size cookies.

Step 3My batter seemed thick and as cookies baked they did not spread out much, like other cookies do. So they ended up thicker and I baked them the full 12 minutes. They turned out very good, kind of crusty on top and chewy in the middle...if you give them a try, I hope you Enjoy!!! P.S. I had out more items than I ended up useing, also was deciding which cake mix I wanted to use...=;D
