cinnamon & white chocolate cookies

This is a recipe I threw together when craving something sweet with cinnamon and white chocolate. My youngest daughter, who does not like anything I make, absolutely loves these! For the best results, it is important to only use margarine, not butter or Crisco.

Ingredients
- 2 ¾ cups flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¾ teaspoon cinnamon
- 1 cup margarine
- 1 ½ cups sugar
- 4 large egg whites
- 1 tablespoon light corn syrup
- 3 teaspoons pure vanilla extract
- 2 teaspoons vegetable oil
- ¾ cup white chocolate chips

Step 1Preheat oven to 375°

Step 2In a large bowl, combine flour, cream of tartar, baking soda, salt, and cinnamon. Set aside.

Step 3In a medium bowl cream together margarine and sugar. Add in egg whites, corn syrup, vanilla, and vegetable oil. Mix well.

Step 4Add sugar mixture to flour mixture and combine. Add in white chocolate chips. Dough will be stiff, but should stick together.

Step 5Scope heaping tablespoon, and roll into a ball. Place on greased cookie sheet about 2 inches apart.

Step 6Bake in preheated oven for about 7 –9 minutes. I pull my while still slightly raw in the middle. Place on cooling rack immediately!
