Ingredients

  • 1/2 cup butter, melted
  • 1/4 cup brown sugar, light
  • 1/2 cup sugar, granulated
  • 1 teaspoon vanilla
  • 6 tablespoons pumpkin puree
  • 1 1/2 cups flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2/3 cup cinnamon chips

How To Make cinnamon chip pumpkin cookies

  • Step 1
    In medium bowl, whisk melted butter, brown sugar and granulated sugar until no brown sugar lumps remain.
  • Step 2
    Whisk in vanilla and pumpkin puree. Set aside.
  • Step 3
    In a large bowl, combine flour, baking powder, baking soda, cinnamon and pumpkin pie spice.
  • Step 4
    Pour the wet ingredients into the dry ingredients and mix together.
  • Step 5
    Fold in cinnamon chips
  • Step 6
    Cover dough and chill at least 1 hour.
  • Step 7
    Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  • Step 8
    Roll the dough into balls. Slightly flatten balls on cookie sheet.
  • Step 9
    Bake 10 to 12 minutes. Allow to cool on cookie sheet at least 10 minutes before removing to wire rack.
