Cinnamon Chip Pumpkin Cookies

Yummy cookies can be made vegan by substituting Earth's Balance for butter.

Makes 24 cookies


  • 1/2 c
    butter, melted
  • 1/4 c
    brown sugar, light
  • 1/2 c
    sugar, granulated
  • 1 tsp
  • 6 Tbsp
    pumpkin puree
  • 1 1/2 c
  • 1/4 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1 tsp
  • 1 tsp
    pumpkin pie spice
  • 2/3 c
    cinnamon chips

How to Make Cinnamon Chip Pumpkin Cookies


  1. In medium bowl, whisk melted butter, brown sugar and granulated sugar until no brown sugar lumps remain.
  2. Whisk in vanilla and pumpkin puree. Set aside.
  3. In a large bowl, combine flour, baking powder, baking soda, cinnamon and pumpkin pie spice.
  4. Pour the wet ingredients into the dry ingredients and mix together.
  5. Fold in cinnamon chips
  6. Cover dough and chill at least 1 hour.
  7. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  8. Roll the dough into balls. Slightly flatten balls on cookie sheet.
  9. Bake 10 to 12 minutes. Allow to cool on cookie sheet at least 10 minutes before removing to wire rack.
  10. After sitting about an hour Enjoy!
