chunky monkey cookies

I was looking for a way to use up browning bananas and I am not a huge fan of banana bread. I also, used Ben&Jerry's ice cream for my inspiration!

Ingredients

  • - 3 cups all-purpose flour
  • - 1 1/4 teaspoon baking powder
  • - 1/2 teaspoon of salt
  • - 1/4 teaspoon of baking soda
  • - 1/2 cup white sugar
  • - 1/2 cup brown sugar splenda
  • - 2/3 cup butter, softened
  • - 2 eggs
  • - 1/2 teaspoon vanilla extract
  • - 1/2 teaspoon banana extract
  • - 1 cup mashed bananas (about 3)
  • - 1/2 cup toasted coconut
  • - 1/2 cup toasted walnuts, chopped
  • - 1 cup milk chocolate chips

How To Make chunky monkey cookies

  • Step 1
    Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. Sift the flour, baking powder, salt, and baking soda together, and set aside.
  • Step 2
    Cream the butter with the sugar until light and fluffy. Beat in the eggs and vanilla. Mix in the mashed bananas.
  • Step 3
    Add the flour mixture, and stir until just combined. Stir in the chocolate chips, coconut, and walnuts. Drop by spoonfuls onto prepared cookie sheets.
  • Step 4
    Bake in preheated oven for 12 minutes.
