This is a basic recipe for delectable chocolate brownies with a delicious swirl of mashed banana in the batter. Some recipes use half chocolate chips and half peanut butter chips for a richer brownie, but this version remains true to the basic recipe that uses all chocolate chips. HIGH-ALT - in Step #2, add 1 tsp baking soda with the flour to ensure the brownies will rise sufficiently during baking.

Ingredients For chunky monkey brownies

  • 1 cup
    unsalted butter, softened
  • 2 lg
    eggs
  • 1 1/2 cups
    light brown sugar, packed
  • 1/2 cup
    white granulated sugar
  • 1/4 tsp
    salt
  • 2 tsp
    vanilla extract
  • 2 cups
    all-purpose flour
  • 1/2 cup
    mashed banana (about one medium-large banana)
  • 1 (12-oz) bag
    semi-sweet chocolate chips
  • 1/2 cup
    chocolate chips (for the top)
  • nonstick cooking spray (for baking dish)

How To Make chunky monkey brownies

    Preheat oven to 350°F. Lightly coat a 9×13” glass baking dish with nonstick cooking spray; set aside.

    With electric mixer, beat together the butter, eggs, both sugars (brown and white), salt and vanilla for one minute (to add plenty of air to the batter). Add flour and mashed banana, and beat until combined. With a wooden spoon, stir in the semi-sweet chocolate chips.

    Pour batter into prepared baking dish. Smooth the surface with a knife or spatula. Sprinkle the 1/2 cup chocolate chips on top.

    Bake for 30 to 40 minutes or just until lightly golden brown and a toothpick inserted in center comes out clean. Let cool completely before cutting into bars.
