My family likes to have these waiting on them on Christmas morning with a cup of hot chocolate before seeing what suprises await us.....

Ingredients

  • 2 cups all purpose flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 - large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dried cherries
  • 1 cup pecans, in pieces
  • - colored sugar - optional

How To Make christmas biscotti

  • Step 1
    Preheat oven to 350' and spray a cookie sheet with butter flavored cooking spray (or whatever you like)
  • Step 2
    Mix flour, sugar, baking powder, and salt in a large mixing bowl. Add 3 eggs and vanilla and beat with an electric mixer on low speed until combined. Next mix in the cherries and the pecans.
  • Step 3
    Once completley mixed, put dough out onto a floured cutting board and divide the dough in halves. Shape each half into the shape of a slender log. Mix the remaining egg up & brush over top of the dough....sprinkle the colored sugar over that and bake for about 35 minutes.
  • Step 4
    Take out of the oven and place on a wire cooling rack...lower the oven to 325'...once cooled place on a clean cutting board and cut the logs into 1 inch diagonal pieces and lay them back onto the cookie sheet and bake for another 7 - 8 minutes or until the edges are golden brown. Put on a wire cooling rack & cool completley....can be stored in an air tight container on the counter for about 1 week....
