Approximately 2 1/2 dozen
Ingredients
- 1 cup shortening
- 1 1/2 cups sugar
- 2 - eggs
- 2 - egg yolks
- 1 cup buttermilk
- 1 cup hot coffee
- 3 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 cups unbleached flour
- 1 cup dark baking cocoa
- FILLING
- 2 - egg whites
- 2 teaspoons vanilla extract
- 4 tablespoons unbleached flour
- 4 tablespoons milk
- 1 1/2 cups shortening
- 8 ounces mascarpone cheese
- 3 cups powdered sugar
How To Make chocolate tiramisu whoopie pies

Step 1Mix (on medium speed) first set of ingredients for cookies in large bowl. I mix wet ingredients, then add the dry. Becare in adding the hot coffee, it may splatter.

Step 2Separate medium bowl mix (slow to medium speed) filling ingredients. I add a cup at a time of the powdered sugar to lessen the chances of making a mess.

Step 3Use a medium sized cookie scoop and use a cookie sheet lined with teflon or parchment paper and bake for approximately 10 minutes at 350 degrees. Cool and take spatula to add filling and top with another cookie. I normally wrap each whoopie pie individually with plastic wrap to keep fresh.
