chocolate raspberry bar cookies
This recipe was given to me by my friend, Rose Vanezia, after a wonderful dinner at her home. Rose is no longer with us, but the recipes we've shared live on. These are rich and decadent , yet so easy to make.

Ingredients
- 3/4 cup butter
- 3 ounces unsweetened chocolate
- 3 - eggs
- 1 1/2 cups sugar
- 1 1/2 teaspoons vanilla
- 1 1/4 cups flour
- 6 ounces raspberry jam, seedless
- 1/4 cup melted chocolate chips
How To Make chocolate raspberry bar cookies

Step 1Melt butter and unsweetened chocolate in a medium saucepan, over medium heat, stirring as it melts.

Step 2Remove from heat. Stir in sugar, blend in eggs one at a time. Add vanilla and stir in flour.

Step 3Spread batter onto a 15x10x1 jelly roll pan (or cookie sheet with sides).

Step 4Bake 15 to 20 minutes at 325 degrees.

Step 5Remove pan from oven and cool. Spread the jam on top. Cut into 4 rectangles. Stack two together, with jam on top. Repeat with other two. Cut into cookie squares. Drizzle with melted chocolate chips on top. Let set until firm.
