Both my mom and dad worked and I was entrusted with watching my younger brothers; not a fun job. To keep them in line, I'd tell them if they were good, I'd make this recipe. It didn't always work (them being good) but the cookies never lasted too long. This is so quick too, that if you have the ingredients at home, you can make this for pot luck dinners (for the children in us!).

Blue Ribbon Recipe

Kids big and small are going to love these yummy cookie bars. They are seriously easy to prepare. Each layer is better than the last. The graham cracker crust with the sweet and gooey condensed milk, topped with crunchy pecans, M&M candies, and shredded coconut is pure bliss.

How To Make chocolate rainbow bars

Test Kitchen Tips
If you can't find chocolate condensed milk, just add 1 tablespoon of cocoa to regular condensed milk.
  • Prepping pan and preheating the oven.
Preheat oven to 350 degrees. You will be using a 9x13" pan.
  • Graham cracker crust and chocolate condensed milk in the pan.
In bowl melt butter. Then add the 2 cups graham cracker crumbs. Press this mixture evenly over bottom of a 13x9" pan. Over this crust, fully coat crumbs with the can of Eagle Brands chocolate condensed milk.
  • M&M mini chips, coconut, and nuts sprinkled over the chocolate layer.
In large bowl, combine the M&M mini chips, the coconut, and the nuts. Sprinkle half of the mixture over the chocolate layer and press lightly into chocolate. Be sure every corner is covered.
  • Bars baking in the oven.
Bake for 15 minutes. Then sprinkle evenly the remaining M&M's, coconut, and nuts. Bake additional 10-15 minutes depending on your oven (you don't want them too brown).
  • Chocolate Rainbow Bar with a bite taken out of it.
Place the pan onto a wire rack and allow to cool. Cut into bars to your desired size.
