Makes these dainty cookies as a stylish after dinner snacks. If you don't have any amaretto liqueur, they will do just fine without it. But if you want a little kick, then you can substitute the same quantity of brandy or rum

Ingredients

  • 12 ounces chocolate chip cooki dough
  • 4 ounces semisweet chocolate
  • 2 tablespoons amaretto liqueur
  • 1/4 cup butter

How To Make chocolate petit four cookies

  • Step 1
    Preheat the oven according to the instructions on the cookie dough packet. Roll out the cookie dough on a floured surface to 1/2 inch thick. Using a 1 inch cutter, stamp out as many rounds from the dough as possible and transfer them to a lightly greased baking sheet. Bake for about 8 minutes or until cooked through. Transfer to a wire rack to cool completely.
  • Step 2
    To make the filling,break the chocolate into small pieces and place in a heatproof bowl with the butter and amaretto liqueur. Sit the bowl over a pan of gently simmering water and stir occasionally, until the chocolate has melted. Remove from the heat and set aside to cool.
  • Step 3
    Spread a small amount of the filling on the flat bottom of one of the cookies and sandwich together with another. Repeat until all the biscuits have been used.
