How to Make Chocolate Petit Four Cookies

Step-by-Step

  1. Preheat the oven according to the instructions on the cookie dough packet. Roll out the cookie dough on a floured surface to 1/2 inch thick. Using a 1 inch cutter, stamp out as many rounds from the dough as possible and transfer them to a lightly greased baking sheet. Bake for about 8 minutes or until cooked through. Transfer to a wire rack to cool completely.
  2. To make the filling, break the chocolate into small pieces and place in a heatproof bowl with the butter and amaretto liqueur. Sit the bowl over a pan of gently simmering water and stir occasionally, until the chocolate has melted. Remove from the heat and set aside to cool.
  3. Spread a small amount of the filling on the flat bottom of one of the cookies and sandwich together with another. Repeat until all the biscuits have been used.
