chocolate mint cookies
found this recipe a long time ago and is always requested....if u like The Girl Scout Thin Mint Cookies....then u found them!

Ingredients
- 3/4 cup butter
- 11/2 cups packd brown sugar
- 2 tablespoons water
- 2 cups semi-sweet chocolate chips
- 2 - eggs
- 21/2 cups all purpose flour
- 11/4 teaspoons baking soda
- 1/2 teaspoon salt
- 36 - chocolate mint wafer candies (such as andes mints)
How To Make chocolate mint cookies

Step 1In a large pan over med heat cook butter, sugar, and water until butter is meltd. Add chocolate chips and stir until partially meltd. Remove from heat and continue to stir until chocolate is completely meltd. Pour into large bowl and let stand for 10 min. (to cool slightly).

Step 2At high speed beat in eggs one at a time into chocolate mixture. Reduce speed to low and add dry ingredients beating until blended. CHILL DOUGH FOR ABOUT AN HOUR.

Step 3Preheat oven to 350

Step 4Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes While cookies are baking unwrap mints and snap in half. When cookies are brought out of oven place 1/2 of mint on top of each cookie n let the mint sit for up to 5 minutes until meltd. Then spread mint ontop of each cookie. EAT AND ENJOY!
