chocolate mint cookies

These chocolate chips are a limited edition - available sporadically. I bought some a couple years ago and never used them until now. I used the recipe on the back of the bag and we loved the results. Using a small (1 tablespoon) cookie scoop, this batch made 5 dozen cookies. I started to throw the bag away before I realized that I might not be able to find the recipe again, so here it is! These are also called Winter chips. What I loved about these is that the mint is not overpowering - only half the chips are mint, the rest are dark chocolate.

Ingredients

  • 1 cup butter, softened (2 sticks)
  • 2/3 cup granulated sugar
  • 2/3 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 2/3 cups nestles® dark chocolate and mint morsels

How To Make chocolate mint cookies

  • Step 1
    Preheat oven to 325ºF. Mix together flour, cocoa, soda and salt. Set aside.
  • Step 2
    Beat butter, sugars and vanilla in mixing bowl until smooth. Add eggs, one at a time beating well.
  • Step 3
    Gradually beat in flour mixture. Stir in morsels.
  • Step 4
    Use 1 Tablespoon cookie scoop, place on parchment lined cookie sheets about 2 inches apart.
  • Step 5
    Bake for 11-13 minutes. Let rest on cookie sheet for two minutes, then finish cooling on baking rack.
