Ingredients

shortening
1 c
sugar
1
egg
1 tsp
vanilla
2 c
all purpose flour
1 tsp
baking powder
1/2 tsp
salt
2 c
coarsely chopped fresh or frozen cranberries
2 c
( 12 ounces ) semisweet chocolate chips
2 Tbsp
shortening
1 1/4 c
chopped walnuts, optional

How to Make Chocolate Dipped Cranberry Cookies

Step-by-Step

  • 1In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and vanilla.

    Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well.

    Using papertowels, pat chopped cranberries dry; stir into dough.
  • 2Drop cookie dough by rounded teaspoonful's 2 inches apart onto baking sheets coated with cooking spray.

    Bake at 350 degree for 11 - 13 minutes or until lightly browned. Remove to wire racks to cool.
  • 3In a microwave, melt chocolate chips and shortening, stir until smooth. Dip each cookie halfway into chocolate mixture; sprinkle chocolate with walnuts if desired.

    Place on waxed paper until set.
