chocolate covered, crunchy peanut butter ritz sandwich cookie

I was in the kitchen searching for ingredients to make PMS Cookies when I realized I didn't have all of the ingredients. However, I did have ritz crackers, crunchy peanut butter and chocolate morsels. So I decided why not. My hubby took one bite and said these taste just like Butterfinger candy bars and oh my goodness he was right. They are so easy to make and awesome to eat!

As many as you need or would like to eat!
Ingredients
- 1 box ritz crackers
- 1 jar jif extra crunchy peanut butter
- 1 package nestle toll house semi-sweet morsels
How To Make chocolate covered, crunchy peanut butter ritz sandwich cookie

Step 1Spread crunchy peanut butter as thick as desired onto a ritz cracker. (I made mine about 1/4 of an inch thick)

Step 2Sandwich together.

Step 3Melt chocolate morsels in double boiler.

Step 4Dip sandwiched crackers into chocolate, covering completely.

Step 5Place dipped cookies onto wax paper as you go and allow them to harden. *I placed wax paper in a dish and put them into the freezer for about 10 minutes for quicker set up. Stored mine in a Ziploc bag in the refrigerator. Yummy, enjoy!
