We love cake mix cookies at our house as a rule but these are exceptionally good.

Ingredients

  • 1 box
    chocolate cake mix
  • 2 large
    eggs
  • 3/4 c
    oil
  • 2 to 3 Tbsp
    milk or half & half
  • 1
    regular size bag shredded coconut
  • 1 to 2 Tbsp
    almond extract (to taste)
  • 1 c
    chocolate chips
  • 1/4 c
    sliced almonds (optional)

How to Make Chocolate Coconut Cake Cookies

Step-by-Step

  1. Mix together cake mix, eggs, oil, milk, and almond extract.
  2. Add in coconut and mix together well.
  3. Add chocolate chips and almonds (optional).
  4. Place on cookie sheet in tsp. size drops. I like to line my cookie sheets with parchment paper so to not have to worry about the greasing or sticking.
  5. Bake at 375 for 8 to 10 minutes.
