Ingredients
- 2 cups plus 2 tbsp (for dusting) all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 stick unsalted cold butter, plus addition butter for greasing the pans
- 1 cup brown sugar, lightly packed
- 1/2 cup granulated sugar
- 1 large egg plus 1 egg white, at room temperature
- 1/2 cup solid packed pumpkin (canned or fresh)
- 2 teaspoons vanilla extract
- 3 cups semi-sweet or bittersweet chocolate chips (or less if desired)

Step 11. Before you forget, position the racks so that they are in the upper and lower thirds of the oven. Preheat the over at 350°F. Lightly butter and dust two cookie sheets. It is recommended by some to repeat this step for each batch. Use you own judgement.

Step 22. Sift the first five ingredients into a large bowl. Using a whisk, ensure these ingredients are well distributed. Set aside.

Step 33. In large mixing bowl, soften butter using a mixer on medium (about 1 minute). Add both sugars and continue to mix on medium until blended, light and airy (another minute). Add the egg and egg white, blending until smooth. Add pumpkin and vanilla and mix until incorporated. The batter at this point might look a tad cuddled. This is normal.

Step 44. Add the flour and chips. Using a spatula, fold these ingredients in until the flour is incorporated. Do not overdue it!

Step 5Using a tablespoon, drop onto the prepared cookie sheets, spacing them about 2 inches apart. Place the two cookie sheets in the oven. Bake for 7 minutes. Reverse positions of the two cookie sheets in the oven and bake for an additional 7 minutes. Note, the baking times will vary from oven to oven as well as whether you want soft cookies or crunchy ones. Some bake 10 minutes for each (crunchy but good). Darker brown cookies are common. :D

Step 6Cool on baking sheet for 2 minutes. Transfer to wire rack. Wait until sheets are completely cool before greasing, dusting, and repeating this step until cookie dough is exhausted.
