  • 1 c
    softened unsalted butter
  • 3/4 c
    white sugar
  • 3/4 c
    brown sugar, firmly packed
  • 2
  • 2 tsp
    vanilla extract
  • 3 c
    oats, quick cooking (i prefer 3-min steel cut oats)
  • 1-1/2 c
    all purpose flour
  • 1
    3.4oz package of instant vanilla pudding mix
  • 1 tsp
  • 1 tsp
    baking soda
  • 12 oz
    semi-sweet chocolate chips (i prefer to use ghirardelli 60% bittersweet chocolate)

How to Make Chocolate chip oatmeal cookies


  1. Add the first 3 ingredients in a mixer. Blend until smooth and creamy.
  2. Add 2 eggs and vanilla to the well blended first three ingredients.
  3. In a large bowl add quick cooked oats, all purpose flour, vanilla pudding, salt and baking soda. Mix well.
  4. Add the dry ingredients to the well blended ingredients.
    When mixed well add chocolate chips. Mix well
