chocolate chip oatmeal cookies
These can be made using the original recipe with chocolate chips or you may substitute raisins. Often I will make and then divide my basic dough in half, and then add chocolate chips to half, raisins to half. The cookies in the picture were made using raisins, as my husband and son like them better than the chocolate chips.
Blue Ribbon Recipe
This recipe takes chocolate chip cookies to the next level. They are thick and fluffy. Oatmeal gives them a chewy texture. Basically, they're a cross between an oatmeal cookie and a chocolate chip cookie - the best of both worlds. Super simple to make, all you do is add the ingredients to a mixer and mix until the dough forms. The method goes against most baking rules but totally works. The perfect cookie if you need to serve a crowd or for a bake sale. They freeze well.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup shortening
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 - eggs
- 1 teaspoon baking soda
- 1 teaspoon hot water
- 1 package chocolate chips (12 oz); can substitute 1 - 1 1/2 cups raisins
- 1 teaspoon vanilla
- 2 cups old-fashioned oats
How To Make chocolate chip oatmeal cookies

Step 1Put all ingredients into a large bowl. Mix well.

Step 2Drop by teaspoonfuls onto cookie sheet (I use Silpat sheets on mine).

Step 3Bake at 400 F for about 6 minutes or until very lightly browned. Do not allow to brown very much. Makes approximately 4 dozen cookies.
