Take one cookie and on the bottom of that cookie spread a large scoop of ice cream on it, then place another cookie top side up on to the ice cream. Push together so that ice cream comes to the edges of the roll the ice cream part into mini chocolate chips or choc. sprinkles.
  3. Wrap each ice cream cookie into plastic wrap and freeze right away. Remove from freezer 15 to 20 minutes before serving.
  4. NOTE: You can use Sugar cookies and add any flavor of ice cream you would like with them, or chocolate cookies with Moose tracks Ice cream..., the sky is the limit with these little treats. Have fun making any of your favorite cookies with your favorite ice cream. ENJOY!
