chocolate chip pudding cookies

My mom saved this recipe from an old Jell-o pudding box back when I was a kid. Everyone always loves them and they stay nice and soft too. At christmas time she sometimes uses Pistachio pudding and christmas colored chocolate chips, it gives it a light green tint to the inside of the cookies though you don't taste the pistachio pudding, kinda gives it a little something extra I think.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 sticks butter (softened)
  • 3/4 cup light brown sugar (packed firmly)
  • 1/4 cup sugar (white)
  • 1 package instant pudding (any flavor)
  • 1 teaspoon vanilla extract
  • 2 - eggs
  • 1 package chocolate chips (12 oz.)

How To Make chocolate chip pudding cookies

  • Step 1
    Mix flour with baking soda.
  • Step 2
    Combine butter, the sugars, pudding and vanilla in large bowl, beat until smooth and creamy, beat in eggs.
  • Step 3
    Gradually add in flour then stir in chocolate chips.
  • Step 4
    Drop from teaspoon or melon baller onto ungreased cookie sheet and bake for 10 minutes at 350F.
