Ingredients
- 1 cup butter..room temp.
- 1 cup plus 1 tablespoon sugar..divided
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- 2 1/2 cups flour
- 3/4 cup baking cocoa
- 1 teaspoon baking soda
- 1 cup pecans..chopped..divided
- 1 package (13 oz) rolo candies
How To Make chocolate caramel cookies

Step 1Preheat oven to 375 degrees In a mixing bowl,cream butter,1 cup sugar & brown sugar...Add eggs,vanilla & mix well.

Step 2In a separate bowl,combine next 3 dry ingredients:add to the creamed mixture & beat just until combined.Stir in 1/2 cup pecans. Shape dough by Tablespoonfuls around each candy.

Step 3In a small bowl,combine remaining pecans & sugar. Dip each cookie halfway. Place nut side up on an ungreased baking sheet.

Step 4Bake..7-10 minutes or until top is slightly cracked. Cool for 3 minutes, remove to cool on wire racks.
