My mother made these every Christmas and everyone always loved them.

Ingredients

2 1/2 c
oatmeal, uncooked
2 c
flour
1 c
brown sugar
1 c
shortening
1 tsp
soda
1 tsp
salt
1 Tbsp
water
8 oz
dates
1 c
water
1 c
white sugar

How to Make Chinese Chews

Step-by-Step

  • 1Preheat oven to 400 degrees.

    Mix oatmeal, flour, brown sugar, shortening, soda, salt, and water together. (Set aside a little less than half.)
  • 2Bring dates, water, and white sugar to a boil in a 1 quart saucepan, allow to boil slowly for approximately 10 minutes until mixture thickens.
  • 3Press the oatmeal mixture evenly in the bottom of a 9 x 13 pan. Spread the date mixture over this layer, then cover with remaining oatmeal mixture. Bake at 400 degrees for 12 minutes.
