How to Make Chinese Almond Cookies

Step-by-Step

  1. Sift flour, sugar, soda and salt together into a bowl.
  2. Cut in butter until mix resembles cornmeal.
  3. Add egg and almond extract; mix well.
  4. Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheet.
  5. Place an almond atop each cookie and press down to flatten slightly.
  6. Bake at 325 degrees for 15 to 18 minutes.
  7. Cool on rack.
