This recipe was my Great Grand Fathers He handed this cookie down and I'm glad it came my way. This recipe is for Eddie's cook book TIME after TIME

Ingredients

  • 1/2 cup vegetable shortening
  • 1 1/2 cups cooked pumpkin
  • 2 1/2 cups flour, less 2 teaspoons
  • 4 teaspoons baking powder
  • 1 cup raisins or dates
  • 1 cup chopped nuts
  • 1 teaspoon lemon extract
  • - 2 eggs
  • 1 1/4 cups brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cinnamon

How To Make chickasaw pumpkin cookies

  • Step 1
    Cream shortening and sugar. Add eggs, pumpkin, salt,nutmeg, ginger, and cinnamon blend well.
  • Step 2
    Sift dry ingredients flour, baking powder together and add to pumpkin mixture. Blend until smooth.
  • Step 3
    Stir in raisins, nuts, and lemon extract.
  • Step 4
    Drop by teaspoons onto greased cookie sheet.
  • Step 5
    Bake at 400 degrees for 15 minutes.
  • Step 6
    Yield: Approximately 3 dozen cookies.
