Ingredients
- 1/2 cup vegetable shortening
- 1 1/2 cups cooked pumpkin
- 2 1/2 cups flour, less 2 teaspoons
- 4 teaspoons baking powder
- 1 cup raisins or dates
- 1 cup chopped nuts
- 1 teaspoon lemon extract
- - 2 eggs
- 1 1/4 cups brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 teaspoon cinnamon
How To Make chickasaw pumpkin cookies

Step 1Cream shortening and sugar. Add eggs, pumpkin, salt,nutmeg, ginger, and cinnamon blend well.

Step 2Sift dry ingredients flour, baking powder together and add to pumpkin mixture. Blend until smooth.

Step 3Stir in raisins, nuts, and lemon extract.

Step 4Drop by teaspoons onto greased cookie sheet.

Step 5Bake at 400 degrees for 15 minutes.

Step 6Yield: Approximately 3 dozen cookies.
