chewy raisin walnut shortbread bars

I don't remember where I got this recipe, but think it was in one of the old cookbooks I had. I like it because it's chewy and with the ingredients that are in it gives it a great flavor.

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 - eggs
  • 1/2 cup brown sugar, firmly packed
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon soda
  • 1 cup walnuts--chopped
  • 1 cup raisins
  • 1/2 cup coconut--flaked

How To Make chewy raisin walnut shortbread bars

  • Step 1
    Heat oven to 350* Lightly grease 8" pan
  • Step 2
    Combine flour and sugar. Cut in butter until mixture resembles fine meal. Press into greased pan. Bake 20 min or just until edges lightly golden.
  • Step 3
    Meanwhile, combine eggs, brown sugar and vanilla; beat well. Stir in soda, walnuts, raisins and coconut. Spoon over hot crust; spread to cover evenly. Return to oven; bake an additional 20-25 minutes or until top is set. Cool completely, Cut into 16 bars.
