chewy raisin walnut shortbread bars
I don't remember where I got this recipe, but think it was in one of the old cookbooks I had. I like it because it's chewy and with the ingredients that are in it gives it a great flavor.

Ingredients
- 1 1/4 cups all purpose flour
- 1/2 cup sugar
- 1/2 cup butter
- 2 - eggs
- 1/2 cup brown sugar, firmly packed
- 1 teaspoon vanilla extract
- 1/8 teaspoon soda
- 1 cup walnuts--chopped
- 1 cup raisins
- 1/2 cup coconut--flaked
How To Make chewy raisin walnut shortbread bars

Step 1Heat oven to 350* Lightly grease 8" pan

Step 2Combine flour and sugar. Cut in butter until mixture resembles fine meal. Press into greased pan. Bake 20 min or just until edges lightly golden.

Step 3Meanwhile, combine eggs, brown sugar and vanilla; beat well. Stir in soda, walnuts, raisins and coconut. Spoon over hot crust; spread to cover evenly. Return to oven; bake an additional 20-25 minutes or until top is set. Cool completely, Cut into 16 bars.
