chewy oatmeal cookies

Moist, chewy cookie that my husband's work place request of me to make. My Husband tells me they disappear in matter of minutes. I hope you enjoy this delicious cookie.

Ingredients

  • 1 cup butter that has come to room temperature but still slightly firm
  • 1/2 cup each light brown sugar (packed)and dark brown sugar (packed)
  • 1/2 cup sugar
  • 2 large eggs slightly beaten
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 2 1/2 cups old fashion oats
  • 6 ounces rasins or cranrasins
  • 1 cup chopped pecans

How To Make chewy oatmeal cookies

  • Step 1
    Pour hot water over raisins/crasins to soften about 15 minutes. Drain well and squeeze excess water out using paper towel. Beat butter and sugars together until light and fluffy. This should take about 5 minutes enough time to get your dry ingredients together.
  • Step 2
    combine in separate bowl flour, salt, baking soda, cinnamon and oats
  • Step 3
    Add: eggs to butter sugar making sure they are incorporated . Add: honey, vanilla mix until well blended.
  • Step 4
    Add: flour mixture in 2 steps mixing after each addition until blended. Add: rains/cranrasins, pecans mixing them into batter.
  • Step 5
    Place in fridge for 30 minutes. Preheat oven to 350 degrees. using parchment or you can lightly grease cookie sheet drop by tablespoon full 2 inches apart Bake until center of cookie are soft and no longer looks wet about 10 -12 minutes. Let cool on the pan 3-5 minutes, then transfer to a rack to cool
