These are some of my husbands favorites! They bake up so soft and chewy, you won't be able to eat just one!

Ingredients

  • 1 cup margarine (i use imperial sticks)
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups all purpose flour
  • 3 cups oatmeal
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 cup coconut
  • 1 cup nuts (walnuts, almonds, pecans...etc.)

How To Make chewy oatmeal cookies

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Combine margarine, brown sugar and granulated sugar. Beat together with mixer until well blended.
  • Step 3
    Add eggs and beat well.
  • Step 4
    Sift flour, salt, baking soda and cinnamon together in separate bowl.
  • Step 5
    Add to creamed mixture and stir until well blended.
  • Step 6
    Put oatmeal into blender or small food processor. Blend well. Do the same for the coconut and nuts.
  • Step 7
    Add to batter, mix well. Batter will be stiff.
  • Step 8
    Roll out cookies with your hands and press down on greased cookie sheet.
  • Step 9
    Bake for about 8 to 10 minutes or until lightly golden brown. Cool on waxed paper or paper towels until completely cool before storing.
