chewy oatmeal cookies

These are some of my husbands favorites! They bake up so soft and chewy, you won't be able to eat just one!

Ingredients
- 1 cup margarine (i use imperial sticks)
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 2 cups all purpose flour
- 3 cups oatmeal
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1 cup coconut
- 1 cup nuts (walnuts, almonds, pecans...etc.)
How To Make chewy oatmeal cookies

Step 1Preheat oven to 350 degrees.

Step 2Combine margarine, brown sugar and granulated sugar. Beat together with mixer until well blended.

Step 3Add eggs and beat well.

Step 4Sift flour, salt, baking soda and cinnamon together in separate bowl.

Step 5Add to creamed mixture and stir until well blended.

Step 6Put oatmeal into blender or small food processor. Blend well. Do the same for the coconut and nuts.

Step 7Add to batter, mix well. Batter will be stiff.

Step 8Roll out cookies with your hands and press down on greased cookie sheet.

Step 9Bake for about 8 to 10 minutes or until lightly golden brown. Cool on waxed paper or paper towels until completely cool before storing.
