These are some of my husbands favorites! They bake up so soft and chewy, you won't be able to eat just one!

  • 1 c
    margarine (i use imperial sticks)
  • 1 c
    brown sugar
  • 1 c
    granulated sugar
  • 2 large
  • 3/4 tsp
  • 1 tsp
    baking soda
  • 2 c
    all purpose flour
  • 3 c
  • 1 tsp
  • 1/2 tsp
  • 1 c
  • 1 c
    nuts (walnuts, almonds, pecans...etc.)

How to Make Chewy Oatmeal Cookies


  1. Preheat oven to 350 degrees.
  2. Combine margarine, brown sugar and granulated sugar. Beat together with mixer until well blended.
  3. Add eggs and beat well.
  4. Sift flour, salt, baking soda and cinnamon together in separate bowl.
  5. Add to creamed mixture and stir until well blended.
  6. Put oatmeal into blender or small food processor. Blend well. Do the same for the coconut and nuts.
  7. Add to batter, mix well. Batter will be stiff.
  8. Roll out cookies with your hands and press down on greased cookie sheet.
  9. Bake for about 8 to 10 minutes or until lightly golden brown. Cool on waxed paper or paper towels until completely cool before storing.
