Soft and chewy, with a good spicy molasses flavor. These cookies are a harbinger of the holidays. Yes, you can make them any time of the year, but to me . . . they scream "Christmas!"

Ingredients

  • 3/4 c
    butter-flavored shortening
  • 1 c
    brown sugar, firmly packed
  • 1
    egg
  • 1/2 c
    molasses
  • 2 1/2 c
    all purpose flour
  • 1/2 tsp
    salt
  • 2 tsp
    baking soda
  • 1/2 tsp
    ground cloves
  • 1/2 tsp
    ground allspice
  • 1 tsp
    ground cinnamon
  • 1 tsp
    ground ginger
  • ·
    granulated sugar, for rolling

How to Make Chewy Molasses Cookies

Step-by-Step

  1. Cream together brown sugar and shortening. Stir in egg and molasses and mix well. Fold in dry ingredients and stir.
  2. Preheat oven to 350°F.
  3. Roll dough into small balls (I use a small cookie scoop) and roll in white sugar. Place on cookie sheets lined with parchment paper that's been lightly greased. Keep cookies about 2 inches apart.

    Alternatively, you can use a Sil-Pat mat, if you have old cookie sheets.
  4. Bake 8 - 9 minutes. Leave on cookie sheet 1 - 2 minutes until set then slide the parchment paper or move cookies to cooling rack and cool completely. Keep in an airtight container for about a week (if they last that long).
