This recipe was in the Land O Lakes Butter pamphlet that I had.

They are crispy on the outside, chewy on the inside. The perfect cookie for coconut lovers!

Ingredients

1/2 c
butter, softened
3/4 c
sugar
1/8 tsp
salt
3
eggs
1/2 tsp
almond extract
5 to 7
drops red and/or green food coloring, if desired
24 oz
sweetened flaked coconut
3 Tbsp
powdered sugar

How to Make Chewy Holiday Macaroons

Step-by-Step

  • 1Heat oven to 325 degrees
  • 2Combine butter, sugar and salt in a large bowl; beat at medium speed until creamy. Add eggs, almond extract, and food coloring, if desired; continue beating until well mixed. Stir in coconut with a wooden spoon and mix well.
  • 3Drop dough by rounded tablespoonfuls, onto parchment paper lined or greased cookie sheets. Bake 20 to 22 minutes, or until edges are lightly browned. Let stand 5 minutes on cookie sheets, then remove to cooling rack. Cool completely. Sprinkle with powdered sugar.
