My fellow quilter Willa would bring these to guild meetings when it was her turn. I made them one day for my husband and he has been addicted ever since. Of course everyone one else loves them as well.

Ingredients

  • 4 - large eggs, well beaten
  • 1 tablespoon butter or margarine, softened
  • 1/3 teaspoon maple extract
  • 1/2 teaspoon vanilla extract
  • 2 cups light brown sugar, packed
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 cups pecans, coarsely chopped
  • - powdered sugar, optional

How To Make chewy cakes

  • Step 1
    Lightly grease a 9x13 baking pan. Preheat oven to 325 degrees.
  • Step 2
    In a medium bowl mix flour, baking powder, baking soda and salt; set aside. Put the pecans in another bowl and set it aside.
  • Step 3
    Mix first five ingredients together in a medium saucepan. Cook on medium heat a couple of minutes, not long, stirring constantly until well blended. Remove from heat and stir in flour and pecans.
  • Step 4
    Bake for 30-45 minutes. Place on wire rack to cool. Cut into pieces and sprinkle with powdered sugar if desired. ENJOY!
