My fellow quilter Willa would bring these to guild meetings when it was her turn. I made them one day for my husband and he has been addicted ever since. Of course everyone one else loves them as well.

large eggs, well beaten
1 Tbsp
butter or margarine, softened
1/3 tsp
maple extract
1/2 tsp
vanilla extract
2 c
light brown sugar, packed
2 c
all-purpose flour
1 tsp
baking powder
1/2 tsp
1/4 tsp
baking soda
2 c
pecans, coarsely chopped
powdered sugar, optional

How to Make Chewy Cakes


  • 1Lightly grease a 9x13 baking pan. Preheat oven to 325 degrees.
  • 2In a medium bowl mix flour, baking powder, baking soda and salt; set aside. Put the pecans in another bowl and set it aside.
  • 3Mix first five ingredients together in a medium saucepan. Cook on medium heat a couple of minutes, not long, stirring constantly until well blended. Remove from heat and stir in flour and pecans.
  • 4Bake for 30-45 minutes. Place on wire rack to cool. Cut into pieces and sprinkle with powdered sugar if desired. ENJOY!
