cherry cookies
It was my great-Aunt Rose that made these tender, cake-like cookies for Italian wedding trays, Christmas, or ME! I added the little drizzle of frosting when I decided to include them in my Christmas cookie tray, and they were wonderful. But, don't wait for Christmas or a wedding...try them anytime!

Ingredients
- COOKIE DOUGH:
- 3/4 cup shortening
- 1 1/2 cups sugar
- 1 (10 oz.) bottle cherry juice (reserve cherries)
- 4 - eggs
- 4 teaspoons baking powder
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract (*optional)
- 4 cups flour (add slowly to rolling consistency)
- GLAZE TOPPING:
- 1 cup confectioners' sugar
- 1/8 teaspoon vanilla extract
- 1-2 tablespoon hot water
How To Make cherry cookies

Step 1Preheat oven to 375'F.

Step 2Beat shortening and sugar until fluffy. Add egg, cherry juice and extract. Mix well.

Step 3Add baking powder with the first cup of flour. (Add flour in small amounts until the dough is soft, but holds its' shape when you roll them.)

Step 4Cut cherries in half, press 1/2 cherry gently into the top and brush with beaten egg.

Step 5Bake in preheated 375' oven for 8-10 minutes. Careful not to over bake them!

Step 6Beat Glaze ingredients until smooth and swirl over each cookie. So pretty!
