It was my great-Aunt Rose that made these tender, cake-like cookies for Italian wedding trays, Christmas, or ME! I added the little drizzle of frosting when I decided to include them in my Christmas cookie tray, and they were wonderful. But, don't wait for Christmas or a wedding...try them anytime!

Ingredients

  • COOKIE DOUGH:
  • 3/4 cup shortening
  • 1 1/2 cups sugar
  • 1 (10 oz.) bottle cherry juice (reserve cherries)
  • 4 - eggs
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (*optional)
  • 4 cups flour (add slowly to rolling consistency)
  • GLAZE TOPPING:
  • 1 cup confectioners' sugar
  • 1/8 teaspoon vanilla extract
  • 1-2 tablespoon hot water

How To Make cherry cookies

  • Step 1
    Preheat oven to 375'F.
  • Step 2
    Beat shortening and sugar until fluffy. Add egg, cherry juice and extract. Mix well.
  • Step 3
    Add baking powder with the first cup of flour. (Add flour in small amounts until the dough is soft, but holds its' shape when you roll them.)
  • Step 4
    Cut cherries in half, press 1/2 cherry gently into the top and brush with beaten egg.
  • Step 5
    Bake in preheated 375' oven for 8-10 minutes. Careful not to over bake them!
  • Step 6
    Beat Glaze ingredients until smooth and swirl over each cookie. So pretty!
