This recipe is from my Aunt Isabelle Matchett. I have made this recipe every year for the past 25 years for my family. You'll love it!!
Blue Ribbon Recipe
Slightly nutty, slightly fruity, and perfectly sweet, these cherry chews are a great treat for any celebration. The cherries burst in your mouth while you chew. Then, you get bits of pecans and the sweetness of coconut. Smooth and creamy, the icing adds another layer of cherry flavor and sweetness.

Ingredients
- CRUST
- 1 cup sifted all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup softened butter
- FILLING
- 2 large eggs
- 1 cup brown sugar
- 1/2 teaspoon almond extract
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup shredded coconut
- 16 ounces maraschino cherries, halved
- 1/2 cup pecan halves
- CHERRY ALMOND ICING
- 3 tablespoons softened butter
- 2 cups sifted icing sugar
- 2 tablespoons maraschino cherry juice
- 1/4 teaspoon almond extract
How To Make cherry chews

Step 1Heat oven to 350 degrees F. Mix flour, oats, brown sugar, baking soda, and salt.

Step 2Add butter.

Step 3Mix until crumbly, first with a fork, then with fingers.

Step 4Press the mixture into the bottom of a greased 13X9X2 pan. Bake for 10 minutes.

Step 5Beat eggs.

Step 6Stir in brown sugar and almond extract.

Step 7Mix flour, baking powder, and salt.

Step 8Gently stir into the egg mixture.

Step 9Add coconut and cherries; stir to blend.

Step 10Pour over the baked crust and spread evenly.

Step 11Sprinkle with pecans.

Step 12Return to oven and bake for 25 minutes until lightly brown.

Step 13Remove from oven and let cool for 20 - 30 minutes.

Step 14For the icing, blend butter and sugar.

Step 15Add cherry juice and almond extract. Use enough juice to make the icing spreadable.

Step 16Stir icing until smooth.

Step 17Ice with the cherry almond icing.
