I don't think I have ever met a kid that didn't like cookies (not many adults, either). This recipe, although old ( I remember eating these as a kid) is very popular with my kids and grand kids, too.

Ingredients For cheesey morsels

  • 1 c
    butterscotch chips
  • 3 Tbsp
    butter, not margarine
  • 1 c
    graham cracker crumbs
  • 1 c
    chopped nuts
  • 8 oz
    cream cheese
  • 1/4 c
    sugar
  • 2
    eggs
  • 2 Tbsp
    flour
  • 2 Tbsp
    lemon juice

How To Make cheesey morsels

    Combine and melt butterscotch morsels and butter. Stir in graham cracker crumbs and chopped nuts. Blend well. Set aside 1 cup of this mixture. Press remaining mixture into an ungreased 11”x7” pan. Bake in a preheated oven at 350F for about 10 minutes.

    Meanwhile in a medium bowl,combine cream cheese and sugar. Add eggs, flour and lemon juice. Beat until smooth and lump free.

    Spread evenly onto hot crust ( the one you just retrieved from the oven). Sprinkle with reserved graham cracker crumb mixture. Bake at 350F for another 20-25 minutes or until golden brown.

    Cool. Cut into squares. Store any leftover cookies in the refrigerator.
