I don't think I have ever met a kid that didn't like cookies (not many adults, either). This recipe, although old ( I remember eating these as a kid) is very popular with my kids and grand kids, too.

Ingredients
- 1 cup butterscotch chips
- 3 tablespoons butter, not margarine
- 1 cup graham cracker crumbs
- 1 cup chopped nuts
- 8 ounces cream cheese
- 1/4 cup sugar
- 2 - eggs
- 2 tablespoons flour
- 2 tablespoons lemon juice
How To Make cheesey morsels

Step 1Combine and melt butterscotch morsels and butter. Stir in graham cracker crumbs and chopped nuts. Blend well. Set aside 1 cup of this mixture. Press remaining mixture into an ungreased 11”x7” pan. Bake in a preheated oven at 350F for about 10 minutes.

Step 2Meanwhile in a medium bowl,combine cream cheese and sugar. Add eggs, flour and lemon juice. Beat until smooth and lump free.

Step 3Spread evenly onto hot crust ( the one you just retrieved from the oven). Sprinkle with reserved graham cracker crumb mixture. Bake at 350F for another 20-25 minutes or until golden brown.

Step 4Cool. Cut into squares. Store any leftover cookies in the refrigerator.
