Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup sugar
- 1 - egg
- 2 teaspoons vanilla extract
- 2 2/3 cups flour
- 1/2 teaspoon baking powder
- pinch salt
- 1 cup candied red cherries, chopped coarsely
How To Make cheery cherry christmas cookies

Step 1Beat butter & sugar for about 3 minutes with an electric mixer, or until fluffy. Add egg and vanilla and beat 1 minute more.

Step 2Mix dry ingredients in a bowl. Add gradually to the butter mixture, making sure not to beat too much and stir in cherries by hand.

Step 3Divide the dough into thirds; roll each into a log. Cover in waxed paper or parchment paper, then plastic wrap. Chill overnight or freeze until ready to use, for up to a month (be sure to thaw out if frozen).

Step 4When ready to bake, preheat oven to 375 degrees. Slice into ¼” slices and bake 375 10 minutes, until barely brown. Store wrapped in refrigerator or freeze until ready to thaw and slice.
