My Grandma's personal favorite to have with tea every Christmas. A recipe passed down through the years and not changed one bit.

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup sugar
  • 1 - egg
  • 2 teaspoons vanilla extract
  • 2 2/3 cups flour
  • 1/2 teaspoon baking powder
  • pinch salt
  • 1 cup candied red cherries, chopped coarsely

How To Make cheery cherry christmas cookies

  • Step 1
    Beat butter & sugar for about 3 minutes with an electric mixer, or until fluffy. Add egg and vanilla and beat 1 minute more.
  • Step 2
    Mix dry ingredients in a bowl. Add gradually to the butter mixture, making sure not to beat too much and stir in cherries by hand.
  • Step 3
    Divide the dough into thirds; roll each into a log. Cover in waxed paper or parchment paper, then plastic wrap. Chill overnight or freeze until ready to use, for up to a month (be sure to thaw out if frozen).
  • Step 4
    When ready to bake, preheat oven to 375 degrees. Slice into ¼” slices and bake 375 10 minutes, until barely brown. Store wrapped in refrigerator or freeze until ready to thaw and slice.
