chai pumpkin spice cookies

Adapted this recipe from passthesushi.com but the photo is mine. I wasn't sure these were going to turn out well. The raw dough didn't have much flavor. However, the finished product is wonderful! The Pumpkin Spice Kiss really rounds out the flavor beautifully. The Pumpkin Spice Kisses are usually out around Halloween. I stocked up!

Ingredients

  • 1/2 cup butter, room temp
  • 1/2 cup sugar
  • 1/4 cup oregon chai concentrate
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 1 teaspoon ground flax seed (optional)
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt (a pinch)
  • 1/2 teaspoon chai mix (see below)
  • 24 - hershey's pumpkin spice kisses
  • CHAI SPICE MIX:
  • 2 tablespoons ground ginger
  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground cloves
  • 2 1/2 tablespoons ground cardamom
  • 2 teaspoons ground nutmeg
  • 2 teaspoons ground allspice
  • 1/2 teaspoon white pepper

How To Make chai pumpkin spice cookies

  • Step 1
    In a small bowl, combine together Chai Spice ingredients; set aside.
  • Step 2
    In a separate bowl, combine butter and sugar until fluffy. Add egg, Chai concentrate and vanilla; stir until blended.
  • Step 3
    In a small bowl, combine flour, flax, baking soda, salt and 1/2 tsp. of chai spice mix. Stir until combined. Refrigerate 1 hour.
  • Step 4
    Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper or lightly spray pan with nonstick.
  • Chai Pumpkin Spice cookies
    Step 5
    Roll 1 inch balls from chilled dough or use a 1 inch scooper; place on prepared cookie sheet about 2 inches apart. Bake in preheated oven for about 12 minutes. Immediately place unwrapped Pumpkin Spice Kiss in center of hot cookie pressing down slightly. Allow to cool completely on wire rack.
