This recipe is a messy one to make but oh so good. Living in Arizona, we have access to good quality dates. This is a must have on our Christmas goodie tray.

eggs, well beaten
1 c
1 c
dates, snipped
1 c
walnuts, chopped
1/4 tsp
almond extract
1 c
coconut, flaked
1 tsp
vanilla extract

How to Make Casserole Cookies


  • 1Beat 2 eggs well. Add sugar and beat until fluffy. Stir in remaining ingredients and pour into un-greased 2 quart casserole.
  • 2Bake at 350 degrees for 30 minutes. Remove from oven and while hot, stir well with wooden spoon. Cool.
  • 3Form into small balls and roll in granulated sugar. Dry on waxed paper. Store in airtight container.
