This recipe was given to me by a friend, it is a soft cookie and oh so good. with a hint of orange in the frosting it's a great combination. Enjoy!

Ingredients
- 2/3 cup sugar
- 1 cup butter
- 1 cup cooked mashed carrots
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking powder
- - powdered sugar
- - orange juice
How To Make carrot cookies with orange glaze

Step 1Cook carrots until soft and mash Cool. Beat butter and sugar until fluffy. Blend in cooked carrot mixture. Add vanilla. Sift dry ingredients and slowly add to butter mixture. Bake at 350 degrees for 10-12 minutes. Glaze with a mixture of powdered sugar and orange juice. Thin the powdered sugar until it is a little less than spreadable.
