carrot cookies, mom's
This recipe of Mom's is the way she made these unique and fantastic cookies. I personally make it with milk in place of the oranges and juice when I make it as I am not a big fan of citrus type frostings.

Ingredients
- 1 cup shortening
- 3/4 cup sugar
- 2 - eggs
- 2 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 3 tablespoons butter
- 1 cup cooked carrots, mashed
- 2 tablespoons grated orange peel
- 1/2 cup powdered sugar
- 1 tablespoon orange juice

Step 1Mix shortening, sugar and eggs. Blend in flour, powder and salt. Blend in carrots. Bake on greased cookie sheets 8-10 minutes at 400 degrees. Cool. Frost with blend of butter, orange peel and powdered sugar, using enough orange juice to make a spreadable frosting.
