Makes 30 cookies
Ingredients
- 3/4 cup sugar
- 3/4 cup butter flavored shortening
- 1 - egg
- 1 1/4 cups grated carrots (3 med. carrots)
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- ICING
- 1 cup powdered sugar
- 2-3 tablespoons orange juice
How To Make carrot cookies

Step 1Preheat oven to 350 degrees.

Step 2Cream together the sugar and shortening until fluffy. Add the egg, carrots and extracts and mix well. Add the flour, baking powder and salt to combine.

Step 3Drop dough by the tablespoon onto a greased cookie sheets. bake for 10 minutes.

Step 4To make the icing combine the powdered and orange juice.

Step 5Remove the cookies from the oven and cool for about 5 minutes and then drizzle with icing while still warm.
