Ingredients For carrot cookies

3/4 csugar

3/4 cbutter flavored shortening

1egg
-
1 1/4 cgrated carrots (3 med. carrots)

1 tspvanilla extract

1/2 tsplemon extract

2 cflour
-
2 tspbaking powder
-
1/2 tspsalt
- ICING
-
1 cpowdered sugar
-
2-3 Tbsporange juice
How To Make carrot cookies

1Preheat oven to 350 degrees.

2Cream together the sugar and shortening until fluffy. Add the egg, carrots and extracts and mix well. Add the flour, baking powder and salt to combine.

3Drop dough by the tablespoon onto a greased cookie sheets. bake for 10 minutes.

4To make the icing combine the powdered and orange juice.

5Remove the cookies from the oven and cool for about 5 minutes and then drizzle with icing while still warm.
