Ingredients For carrot cookies

  • 3/4 c
    sugar
  • 3/4 c
    butter flavored shortening
  • 1
    egg
  • 1 1/4 c
    grated carrots (3 med. carrots)
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    lemon extract
  • 2 c
    flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • ICING
  • 1 c
    powdered sugar
  • 2-3 Tbsp
    orange juice

How To Make carrot cookies

    Preheat oven to 350 degrees.

    Cream together the sugar and shortening until fluffy. Add the egg, carrots and extracts and mix well. Add the flour, baking powder and salt to combine.

    Drop dough by the tablespoon onto a greased cookie sheets. bake for 10 minutes.

    To make the icing combine the powdered and orange juice.

    Remove the cookies from the oven and cool for about 5 minutes and then drizzle with icing while still warm.
