Ingredients

1 c
all-purpose flour
1 tsp
baking soda
1 tsp
cinnamon
1/4 tsp
salt
2
eggs
1 c
granulated sugar
2/3 c
vegetable oil
2 4-oz jar(s)
carrot baby food
2 tsp
vanilla extract
1 3-oz pkg
cream cheese
1/4 c
butter
2 c
sifted powdered sugar

How to Make Carrot Bars

Step-by-Step

  • 1Preheat oven to 350 degrees. Grease a 13x9x2-inch pan; set aside.
  • 2In medium bowl, combine flour, baking soda, cinnamon, and salt; set aside. In large bowl combine eggs, granulated sugar, and oil. Beat with wooden spoon until combined. Beat in carrots and 1 tsp. vanilla. Stir in flour mixture. Pour into prepared pan.
  • 3Bake for 20 to 25 minutes or until toothpick comes out clean. Cool in pan on wire rack.
  • 4For frosting, in medium mixing bowl, let cream cheese and butter stand for 30 minutes until softened. Beat with electric mixer on medium speed until smooth. Beat in remaining 1 tsp. vanilla. Gradually beat in powdered sugar until desired consistency. Spread frosting on cooled bars. Store in refrigerator.
