This recipe was in a Walmart Family Cookbook and submitted by Sheri Hughes, Alanson, MI. She got it from an afternoon church coffee. Love 'em!

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 - eggs
  • 1 cup granulated sugar
  • 2/3 cup vegetable oil
  • 2 4-oz jars carrot baby food
  • 2 teaspoons vanilla extract
  • 1 3-oz packages cream cheese
  • 1/4 cup butter
  • 2 cups sifted powdered sugar

How To Make carrot bars

  • Step 1
    Preheat oven to 350 degrees. Grease a 13x9x2-inch pan; set aside.
  • Step 2
    In medium bowl, combine flour, baking soda, cinnamon, and salt; set aside. In large bowl combine eggs, granulated sugar, and oil. Beat with wooden spoon until combined. Beat in carrots and 1 tsp. vanilla. Stir in flour mixture. Pour into prepared pan.
  • Step 3
    Bake for 20 to 25 minutes or until toothpick comes out clean. Cool in pan on wire rack.
  • Step 4
    For frosting, in medium mixing bowl, let cream cheese and butter stand for 30 minutes until softened. Beat with electric mixer on medium speed until smooth. Beat in remaining 1 tsp. vanilla. Gradually beat in powdered sugar until desired consistency. Spread frosting on cooled bars. Store in refrigerator.
