This recipe was in a Walmart Family Cookbook and submitted by Sheri Hughes, Alanson, MI. She got it from an afternoon church coffee. Love 'em!

  • 1 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
  • 1/4 tsp
  • 2
  • 1 c
    granulated sugar
  • 2/3 c
    vegetable oil
  • 2 4-oz jar(s)
    carrot baby food
  • 2 tsp
    vanilla extract
  • 1 3-oz pkg
    cream cheese
  • 1/4 c
  • 2 c
    sifted powdered sugar

How to Make Carrot Bars


  1. Preheat oven to 350 degrees. Grease a 13x9x2-inch pan; set aside.
  2. In medium bowl, combine flour, baking soda, cinnamon, and salt; set aside. In large bowl combine eggs, granulated sugar, and oil. Beat with wooden spoon until combined. Beat in carrots and 1 tsp. vanilla. Stir in flour mixture. Pour into prepared pan.
  3. Bake for 20 to 25 minutes or until toothpick comes out clean. Cool in pan on wire rack.
  4. For frosting, in medium mixing bowl, let cream cheese and butter stand for 30 minutes until softened. Beat with electric mixer on medium speed until smooth. Beat in remaining 1 tsp. vanilla. Gradually beat in powdered sugar until desired consistency. Spread frosting on cooled bars. Store in refrigerator.
