Who doesn't love oatmeal cookies!? Kick them up a notch with caramel! I even add a little bit of coconut.

Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar, firmly packed
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 - egg
- 2 teaspoons vanilla extract
- 1 1/2 cups all purpose flour
- 3 cups oats, uncooked
- 11 ounces kraft caramel bits
- 1 cup pecans, in pieces (toasted)
- 1/3 cup coconut, flaked

Step 1Preheat oven to 350 Line baking sheet with parchment paper

Step 2Combine butter, sugars, salt, soda, powder and cinnamon. Beat until well blended. Add eggs, vanilla-beat until blended. Add flour to creamed mixture and beat until blended. Stir in oats, caramel baking bits, pecans and coconut.

Step 3Drop by rounded teaspoon on to parchment lined baking sheet. Bake at 350 for 11-12 min. Allow to cool slightly before removing to cooling rack.
