Who doesn't love oatmeal cookies!? Kick them up a notch with caramel! I even add a little bit of coconut.

Ingredients

butter, softened
1 c
sugar
1 c
brown sugar, firmly packed
1 tsp
salt
1/2 tsp
baking soda
1 tsp
baking powder
1 tsp
cinnamon
2
egg
2 tsp
vanilla extract
1 1/2 c
all purpose flour
3 c
oats, uncooked
11 oz
kraft caramel bits
1 c
pecans, in pieces (toasted)
1/3 c
coconut, flaked

How to Make Caramel & Pecan Oatmeal Cookies

Step-by-Step

  • 1Preheat oven to 350
    Line baking sheet with parchment paper
  • 2Combine butter, sugars, salt, soda, powder and cinnamon. Beat until well blended.
    Add eggs, vanilla-beat until blended.
    Add flour to creamed mixture and beat until blended.
    Stir in oats, caramel baking bits, pecans and coconut.
  • 3Drop by rounded teaspoon on to parchment lined baking sheet.
    Bake at 350 for 11-12 min.
    Allow to cool slightly before removing to cooling rack.
