In a large mixing bowl, cream the butter and sugar.
Add in vanilla, caramel, and egg mixing well.
Gently mix in the flour, soda, cinnamon and salt until well incorporated. Stir candy by hand.
Drop by spoonfuls onto ungreased baking sheets 2 inches apart.
Bake for 8 minutes. Cool on wire racks and store in an airtight container at room temperature.
