This cookie is perfect for the Fall and it's also great as a breakfast cookie or a mid morning snack. It's not too sweet, you get a bite of apple, a little crunch from that breakfast bar coating, and a sweet and salty finish with that yummy caramel and coarse sea salt.

How To Make caramel apple nut cookies

  • Step 1
These are the Breakfast bars I used, you can use whatever brand or flavor you like.
  • Step 2
Before you begin, place breakfast bars in food processor and crush, set aside. Peel and core apple, cut into very small diced pieces, squirt with a little lemon juice, set aside.
  • Step 3
In mixing bowl combine butter and sugars and mix. To that add vanilla, baking soda, salt and egg and mix well. Now add flour a little at a time until completely combined. Now add diced apples and chopped walnuts, mix only to combine, do not over mix.
  • Step 4
Spoon out by the tablespoon, roll in your hand to form a ball. Coat with crushed breakfast bar crumbs.
  • Step 5
Bake 375º for 9-10 min. Allow to cool completely, remove to bake sheet with wire rack.
  • Step 6
Drizzle with caramel sauce, sprinkle with coarse sea salt if desired. Remove caramel from can into small bowl, microwave about 1 min or until you can stir and drizzle easily.
