caramel apple cider cookies

I adapted this recipe from The Cooking Photographer's "Caramel Stuffed Apple Cider Cookies." (http://www.thecookingphotographer.com/2009/11/caramel-stuffed-apple-cider-cookies.html) I don't like Kraft caramels, so I made the homemade caramel found at http://www.giverslog.com/?p=3168 to drizzle over the cookies. Amazing fall flavor!

Ingredients

  • 1 cup butter, unsalted
  • 1/2 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 1/2 teaspoon salt
  • 1 box alpine spiced apple cider instant original drink mix
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon, ground
  • 3 cups all purpose flour

How To Make caramel apple cider cookies

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Cream butter, sugars, salt, and the 10 packets of apple cider mix until fluffy. Beat in eggs and vanilla extract. In a separate bowl, mix baking soda, baking powder, cinnamon and flour. Add to butter mixture and stir until combined.
  • Step 3
    Using a small cookie scoop, drop 1 1/2 inches apart onto ungreased baking sheets. Bake 10-12 minutes, rotating baking sheets halfway through baking time. Allow to cool on the pan for 5 minutes before removing to cooling racks.
  • Step 4
    Drizzle with melted caramel. (I make my own using the recipe at http://www.giverslog.com/?p=3168. I cook it as directed to the caramel apple dipping stage.)
