I adapted this recipe from The Cooking Photographer's "Caramel Stuffed Apple Cider Cookies." (thecookingphotographer.com/...s.html) I don't like Kraft caramels, so I made the homemade caramel found at giverslog.com/?p=3168 to drizzle over the cookies. Amazing fall flavor!

Ingredients

  • 1 c
    butter, unsalted
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar, firmly packed
  • 1/2 tsp
    salt
  • 1 box
    alpine spiced apple cider instant original drink mix
  • 2
    eggs
  • 1 tsp
    vanilla
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    cinnamon, ground
  • 3 c
    all purpose flour

How to Make Caramel Apple Cider Cookies

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Cream butter, sugars, salt, and the 10 packets of apple cider mix until fluffy. Beat in eggs and vanilla extract. In a separate bowl, mix baking soda, baking powder, cinnamon and flour. Add to butter mixture and stir until combined.
  3. Using a small cookie scoop, drop 1 1/2 inches apart onto ungreased baking sheets. Bake 10-12 minutes, rotating baking sheets halfway through baking time. Allow to cool on the pan for 5 minutes before removing to cooling racks.
  4. Drizzle with melted caramel. (I make my own using the recipe at giverslog.com/?p=3168. I cook it as directed to the caramel apple dipping stage.)
