Cape Cod Cranberry Cookies
Original recipe came from my Cookbook ~ Savoring Cape Cod and was submitted by Francine Kreisberg.
2 1/2 call-purpose flour
1/2 tspbaking soda
1/2 tspcream of tartar
1 1/4 cpacked brown sugar
1 Tbsporange juice
1 tspvanilla or orange extract
1 cdried sweetened cranberries
1 Tbspgrated lemon or orange zest
I ADDED A 1/2 CUP OF WALNUTS AND USED ALMOND EXTRACT TO MINE. I USED THE GRATED ORANGE ZEST AS WELL.
How to Make Cape Cod Cranberry Cookies
- 3. If dough is too sticky, chill until easier to handle. Divide into 3 parts. Shape into long rolls. Wrap in wax paper or plastic. Chill or freeze.
4. When ready to bake, heat oven to 350 degrees.
Slice cookie rolls and place slices on greased cookie sheets about 1 inch apart.
Bake 10-12 minutes.
Yield: 20-30 cookies per roll.
