Ingredients

  • COOKIES
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet mini chocloate chips
  • FILLING
  • 1 1/2 cups ricotta cheese
  • 1/2 cup mascarpone cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips, mini

How To Make cannoli mini cookie cups

  • Step 1
    Preheat oven to 350 degrees F. Grease a mini muffin pan and set aside.
  • Step 2
    In a mixing bowl, cream the sugars until light and fluffy. Add the egg and butter and mix well.
  • Step 3
    Mix in the flour, baking soda, salt, and mini chocolate chips until a dough forms.
  • Step 4
    Roll into balls and place in the prepared pan, pressing gently to make a well in the middle.
  • Step 5
    Bake for 10 to 12 minutes.
  • Step 6
    Remove and cool.
  • Step 7
    Use a spoon to press the center in to create the well again.
  • Step 8
    While the cookies are baking, mix the filling. For best results, let the ricotta sit in a fine mesh strainer for 5 minutes to drain.
  • Step 9
    Add all ingredients except chocolate chips and beat with beaters until smooth. Fold in the chips.
  • Step 10
    When the cookies are cool, pipe or spoon the filling into the cookies.
  • Step 11
    Set in the fridge to firm up the filling and serve.
