Ingredients
- COOKIES
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet mini chocloate chips
- FILLING
- 1 1/2 cups ricotta cheese
- 1/2 cup mascarpone cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips, mini
How To Make cannoli mini cookie cups

Step 1Preheat oven to 350 degrees F. Grease a mini muffin pan and set aside.

Step 2In a mixing bowl, cream the sugars until light and fluffy. Add the egg and butter and mix well.

Step 3Mix in the flour, baking soda, salt, and mini chocolate chips until a dough forms.

Step 4Roll into balls and place in the prepared pan, pressing gently to make a well in the middle.

Step 5Bake for 10 to 12 minutes.

Step 6Remove and cool.

Step 7Use a spoon to press the center in to create the well again.

Step 8While the cookies are baking, mix the filling. For best results, let the ricotta sit in a fine mesh strainer for 5 minutes to drain.

Step 9Add all ingredients except chocolate chips and beat with beaters until smooth. Fold in the chips.

Step 10When the cookies are cool, pipe or spoon the filling into the cookies.

Step 11Set in the fridge to firm up the filling and serve.
