YUM! What's not to love but butterscotch?

Ingredients

  • 1 cup butter, room temperature
  • 2 large eggs
  • 2 cups brown sugar, firmly packed
  • 1 teaspoon pure vanilla extract
  • 1 cup nuts, chopped, your choice
  • 3 cups flour, sifted
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

How To Make butterscotch slice cookies

  • Step 1
    In a medium mixing bowl, sift together flour, baking soda & salt. Set aside.
  • Step 2
    In a large mixing bowl using a hand mixer, cream together butter, brown sugar & vanilla. Add eggs one at a time. Add flour mixture one cup at a time & mix well. Stir in chopped nuts.
  • Step 3
    Place dough on wax paper and form into 2" rolls. Refrigerate overnight.
  • Step 4
    Preheat oven to 375º F. Slice into 1/8" slices & bake on an ungreased baking sheet for 5 - 6 minutes.
  • Step 5
    Allow to cool slightly before removing from baking sheet.
  • Step 6
    NOTES: Makes a great cookie to be served with tea or coffee. Dough freezes well. Dough is easier to cut when frozen. If using this method, allow cookies to sit 3 - 4 minutes on a cool baking sheet before baking.
