butterscotch shortbread

I got this recipe from a dear friend named Carol. These are GREAT...... I don't like to make these unless the Grandkids will be here. Because I will eat them all. They are that good. And so easy to make.

Ingredients

  • 1 cup butter ( softened)
  • 1/2 cup powered sugar
  • 1 teaspoon vanilla
  • 1 3/4 cups flour
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup butterscothch chips
  • 1/2 cup toffee bits

How To Make butterscotch shortbread

  • Step 1
    Cream butter and powered sugar untill light and fluffy.
  • Step 2
    Add vanilla.
  • Step 3
    Mix flour,cornstarch,and salt. Add to creamed mixture. Mix well.
  • Step 4
    Fold in chips and toffee. Put on a piece of plastic wrap, shape into a log shape. wrap the plastic wrap around the log. Refrigerate at least 1 hour.
  • Step 5
    Unwrap the dough, place on cutting board. Cut in to slices about 3/8 ths of an inch thick. Place on ungreased cookie sheet.
  • Step 6
    Bake @ 350 for 10 to 12 min. Or untill lightly browned. Remove to wire racks to cool. Makes aprox. 4 dozen.
