Oh how I love Butterscotch and Oatmeal cookies,I just took a VACA to Nebraska so my family could meet my newest addition Abigail Jane,and I'm a mom that loves to save money,especially when we are about to travel 4 states and 3 men in the car! I made cookies this trip, and boy oh boy am I glad I did, these guys where super hungry and loved the home cooked snacks verses the store bought processed foods. They even saved me a cookie, how sweet LOL ;0) Enjoy !

Ingredients For butterscotch and oatmeal cookies

  • 3/4 c
    butter,room temp
  • 1/2 c
    sugar
  • 1 c
    brown sugar, firmly packed
  • 2 lg
    eggs
  • 1 tsp
    vanilla extract
  • 1 1/4 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3 c
    old fashioned oats
  • 1 bag
    11 oz of butterscotch chips

How To Make butterscotch and oatmeal cookies

    Preheat oven to 350 degrees. In a large bowl, beat the butter until smooth and almost fluffy, about 2 minutes. Add the sugar and continue beating until the mixture is light and fluffy, about 4-5 minutes. Add the eggs and vanilla and beat until smooth again.

    Add vanilla,salt,soda,flour,then add oatmeal ONE cup at a time, once all mixed together add butterscotch.

    take a 2 inch scoop or a soup spoon if you dont have a scoop, and drop cookies on an NONE greased pan, and set about three cookies apart,(width wise) and place in the oven for

    Bake for 10-11 minutes. Remove from the oven when cookies start to brown around the edges. Let them cool on the same tray for 5-10 minutes; this will allow them to finish baking without overcooking. When the cookies are firm enough to handle, transfer them to a wire cooling rack and let cool completely. Serve warm or cooled. These Cookies freeze well!! Get a glass of milk and Enjoy!!
